a couple months ago i received a message on instagram from a coffee producer if i’d like to try some of their 2019 coffees? umm yeah! why wouldn’t i? i didn’t know much about pecora, but they are a coffee producer from veracruz. i asked a couple of my coffee friends here in the city if they knew of them and each had great things to say, so of course this just got me more curious. carlos offered to send me his coffees for pour over, which of course, would bring out the best of the coffee, but at the time i was on a bit of an espresso binge, so he said he’ll send a bag of both. this made me happier.
the first of two bags i tried was their dynamic espresso. its a honey processed caturra variety, of course, from veracruz. veracruz is known around mexico to have amazing beans, and these did not dissappoint. when trying a new espresso bean, i like to have it straight, and then add some water and have it as an americano, to try the difference. but first, lets talk about how amazing the beans smelled when i opened the bag. ufffff (a common mexican saying when something excites you), it smelled incredible. it tasted just as good. by the time i was making my second shot for the americano, i had already finished the espresso shot. it was bold, but not too dark, with a slight hint of acidity to complement. notes of dark fruits like blackberry, blueberry, as well as acidity from oranges. these are the kind of notes i’ve been into recently. watered down a little as an americano was also delicious, a bit fruitier. i think if i was to have this again, i’d try it as a cappuccino, but honestly, its such a versatile espresso that you can have it any way and it’ll be good.
